In 2019, we decided to try a plant-based diet as a way to help the environment. After a month of having fun with new ways of cooking plants, we started feeling better physically. We decided that we could eat plant-based as a lifestyle choice IF we could figure out better cheese than what we were able to buy in the grocery store. We started Mad Cheese with no capital, three products, and worked out of a church kitchen for the first year.
