Sambar Dal is a South Indian classic made from pigeon pea lentils. This dal gets its signature flavor from a variety of blended and whole spices like dried curry leaves, mustard seeds, kashmiri red chili powder, and more. A wholesome meal with a classic Indian kick!
Soak lentils in warm water for 20 minutes.
In a large pot, heat 2 tbsp oil, then add ¾ cup diced onion. Sauté over medium-high heat until soft (3-4 min).
Add ¾ cup diced tomatoes and spice blend. Cook until soft (2-3 min).
Stir in lentils and 4.5 cups water, bring to a boil over high heat.
Cover and simmer on medium-low heat, stirring occasionally (25-30 min).
Garnish with cilantro and lime. Add chili powder or chili flakes if you prefer a spicy dish!
