HOW IT'S MADE
FRUIT - Freeze-dried raspberries from Tasmania, Australia, undergo a 48-hour cold steep. The freeze-drying process strips out roughly 85% of the fruit's water content, concentrating its flavour.
TANNIN - Chamomile contributes tannin structure and a creamy finish, with the raspberry skins adding a touch more tannin.
SALINITY - Murray River salt brings salinity and a moreish quality to the drink.
ACIDITY - Verjus made from Semillon grapes grown in the Barossa Valley, Australia.
BALANCE - As in cooking, a small amount of sugar is added at the end to balance the drink, adjusted according to how sweet the raspberries naturally are.
